Here is the quick story on how this started. A couple of times a week, I go into the Starbucks on South Congress. Eventually, I started taking a closer look at the Starbucks book pick. After learning more about Beah's plight, I purchased the book and knew it would be a perfect fit for the 6th graders.
About 25 students in my class and many in Connor's class decided to read the book. One of the many observations I made about the book was the numerous mentions of cassava. I decided to investigate cassava and ultimately decided to make something out of cassava to add a gustatory dimension to the book discussion.
After learning quite about cassava, I searched the net for recipes, purchased necessary ingredients for about three different recipes,and on Wednesday night preceding the Friday discussion attempted the first cassava cake--vapid and uninspired as the picture indicates.
The second attempt with a different recipe started early Friday morning before school, and it was a fortunate success for this cassava-baking neophyte.
This second recipe almost did not get completed had it not been for Waffles. On Thursday evening, I had fallen asleep early in the evening (intending to wake up later and finish the cassava). I ended up falling asleep and staying asleep until Waffles, the smallest of my three dogs, started barking. Apparently, Waffles, had been locked out of the house and was content with staying outside until about 3:30 in the morning when he had enough of being locked out and barked incessantly.
