Pate de foie / liver pate, based on Jane Grigson's recipe in "Charcuterie and French Pork Cookery".  "A simple pate, like you might put in children's sandwiches", she says.  Well, it can go in my sandwiches too.  The kids can't have it all.

Also lamb sausages with garlic & red wine, and pork sausage meat.
